Rotten Fruit Cake

1 quart of last year's off color fruit blended, juice and all. Use apricots, peaches, pears or cherries.
Combine and sift
4 cups flour
4 tsp soda
1 1/2 tsp salt
2 tsp cinnamon
1/2 tsp cloves

Mix together
1 1/2 cups sugar
2 eggs
1/2 C oil

Add dry ingrediants and fruit to egg and sugar mixture. Blend well. Add either or all of
1 C raisins
1 C nuts
Chocolate chips

Batter will be thin. Makes 3 loaves. Bake at 350 for 45 minutes or until done.

Actually, this is a delicious cake, and better for you than most desserts. My recipe comes from my mother, a child of the great depression. It is almost the same, but uses no eggs either. Of course you'd never use actual "rotten" fruit, but if you're lucky enough to have a fruit tree that produces well year after year, this is a great way to use the older bottles of fruit. After 18 months of unemployment, this is another blessing I have -- an apricot tree that didn't freeze 3 years in a row. My cake is in the oven (in a jellyroll pan instead of loaf pans) and is going to a party tonight!
