Perfection Salad

As I am looking through this pile of old school recipes Knox Gelatin seems to be "the cool" ingredient. Here is a link if you are curious.

Perfection Salad

2 enveloped of Knox gelatin
1 C cold water
2 C hot water
1/2 C sugar
1 tsp salt
1/3 C cider vinegar
1/4 C lemon juice
1 can 6.5 oz shrimp
1 1/4 C finely chopped cabbage
3/4 C finely diced celery
1/3 C finely chopped green pepper
1/4 C diced pimento (optional)
1/4 C shredded carrots

Soften gelatin in cold water for 5 minutes. Combine hot waster, sugar and salt in saucepan and bring to simmer. Remove from heat and add softened gelatin stirring until dissolved. Add vinegar and lemon juice. Cool until mixture starts to thicken and fold in diced chopped and shredded vegetables with drained shrimp. Pour into a mold or 9x9x2 inch pan. Chill until firm. Unmold on crisp salad greens. Serve with chive cream dressing.

Chive Cream Dressing

1/2 C mayonnaise
1/2 C sour cream
1/4 C lemon or lime juice
1/2 tsp salt
1/4 tsp white pepper
2 tsp chives

Blend ingredients together. Turn into serving dish. If desired garnish with additional chives.

WARNING - Perfection Salad is really sick and wrong. I have actually tasted it!

Wow. That's a bold title. It sounds like they've "perfected" disgusting. Canned shrimp? That's just plain wrong.

Fae served this at dinner when I was first dating your dad. Talk about embarrassing. i kinda had to gag it down. Not only does it look like something the cat threw up but is tastes like it too.
